Use gboards with a firewall blocking any traffic from it.

Wait, is using GBoard with blocked internet access actually private? I read other people say it is like a keylogger, and probably would bypass the internet restriction.

How would it bypass the internet restriction imposed on it by an independent firewall?

It just could share the data over other Google apps, including system components.

If you want too break your entire Android system go ahead, also there is connectivity check which bypasses all VPNs even with kill switch on, how do u wanna known if Google doesn't do this for other connections too in the future updates? Also it take some time for the VPN to load after reboor, in this moment data could be already transfered. Be realistic, don't play with the fire, instead go with smth safer if possible if you care that much, if not go ahead.
